Too Good To Be True Carrot Cake (THM – S)

I made carrot cake to take to my parents’ for Easter. I decided I wanted to try to come up with a Trim Healthy Mama (THM) version of the recipe. I was excited I actually wrote down my measurements and it tastes amazing!! <3

*Just a note to consider* This is NOT a light and fluffy cake, as you can see from the picture. It is deliciously moist (not dry and crumbly) but it is not meant to be a light and fluffy cake. I wanted to give everyone that heads up before they had false expectations; especially if it’s your first time making something gluten free or using coconut flour. <3 (It’s still so very yummy though!!)

Ingredients
Cake

½ C Coconut Flour
1 tsp baking powder
½ tsp baking soda
2-3 pinches of mineral salt
1 tsp ground cinnamon
1/8 tsp ground nutmeg
¼ tsp ground cloves
1 tsp glucomannan (gluccie)
½ c melted coconut oil
1/3 c shredded carrots
¼ c Xylitol

5 doonks (1/32 tsp = 1 doonk)Pure Monk Fruit Extract (or Stevia)
4 eggs
¼ c egg whites
¾ c water

Icing
8oz cream cheese
3 Tbsp butter
5 doonks (1/32 tsp = 1 doonk)Pure Monk Fruit Extract (or Stevia)
¼ c powdered Xylitol
1 tsp vanilla

Directions
1.
Preheat oven to 350.
2. Combine dry ingredients (coconut flour, baking powder, baking soda, spices, gluccie) in a medium bowl.
3. In a separate bowl combine wet ingredients and sweetener (carrots, coconut oil, eggs, egg whites, water, sweeteners.
4. Pour wet ingredients into dry ingredients. Mix well. Let stand for a couple minutes to allow gluccie and coconut flour to absorb the moisture. Mix again.
5. Pour into an 8.4×10.4” baking dish.
6. Bake 40-45 mins.
7. Meanwhile mix together icing. Soften cream cheese and butter but do not overheat.
8. Add sweeteners and vanilla and allow to set in the fridge.
9. Remove cake from oven and allow to cool completely.
10. Ice cake and refrigerate 2hrs before serving.

**This is a Trim Healthy Mama S (high in healthy fats, low in carbs (10g or less)). Normally, in S meals its recommended to keep carrots and other starchy vegetables limited to E meals (where your body will be burning healthy carbs as fuel). This recipe can serve about 10-15 people and the number of carrots per serving is minimal. :-) (Refer to Sweet Creamy Coleslaw (S) recipe in the THM Cookbook which includes carrots in that recipe as well).
