Best Ever Gluten Free Blueberry Muffins (THM – E)

This is a recipe that I originally shared via my Instagram feed and then on my THM Facebook Page (this is a separate page from my main blog page specifically for THM). Many have enjoyed this recipe and are always asking where it is on my blog. So I decided to share here. :-)
This Gluten Free Blueberry Muffins Recipe is amazing!


Faith’s Gluten Free Oat Blueberry Muffins

Preheat oven to 375 and place paper liners in cupcake pan.

Mix dry ingredients to blender:
3 c rolled oats, blended into flour
1 tbsp gluccie
1/4 c collagen
1 1/2 tsp baking soda
1/2 tsp salt

Mix together in a small bowl and allow to set:
1 tsp honey
1 tbsp yeast
1 1/2 c warm water (warm to touch but not hot)

Put in stand mixer and mix together:
1 tbsp olive oil
1/4 c applesauce
3 egg whites
1 cup sweetener (1/2 Xylitol and 1/2 Erythritol)

Add yeast ingredients to stand mixer and mix again for a few seconds.

Add dry ingredients and mix together.

Add 1 cup frozen blue berries to mixture and stir to incorporate.

Scrape contents into cupcake pan and fill to top of the liners.

Allow dough rest on top of stove for 10mins.

You will have a little extra batter. Add this to a small ramekin dish.

Bake for 30 mins.

Allow to cool 3-5 minutes, remove from pan to continue cooling.
